Hello, friends! In this week’s vlog, join me as I cook one of my family’s favorite from scratch real food meals — Shepherd’s Pie! This recipe is cheap and easy to make, and it’s a perfect meal for the winter season. ? SHEPHERD’S PIE RECIPE ?
Ingredients:
- 2-pounds baking potatoes, peeled and cubed
- 2/3 cup milk
- 1/3 cup grated Parmesan cheese
- 2 – 3 tablespoons butter
- Salt (to taste)
- 1/4 teaspoon black pepper
- 1-pound lean ground beef
- 1 onion, chopped
- 6 garlic cloves, minced
- 1/2 cup dry red wine
- 2 – 4 tablespoons tomato paste
- 1/2 – 1 teaspoon dried thyme
- 1 10-ounce frozen mixed veggies
- 1 cup beef broth
Directions:
Preheat oven to 350 degrees. Spray 9×13 casserole dish with cooking spray and set aside.
Place cubed potatoes in a large pot of water and bring to a boil. Cook until tender. Drain, and return potatoes to the pot. Add milk, salt, and butter, and mash or blend until smooth. Set potatoes aside.
Add meat, onion, and garlic to a skillet and brown over medium heat. Next, add wine, tomato paste, thyme, and season with salt and pepper. Cook for 2 more minutes. Add mixed vegetables to the skillet. Heat thoroughly.
Transfer beef and veggies to the casserole dish. Spread mashed potatoes over the filling. Top with Parmesan cheese, and bake 35 minutes or until filling is bubbly around the edges.
Remove from oven, plate up, and let stand until cool enough to eat.
